Ripe mango, a thin rice-paper shell, a little palm sugar, a pinch of chili and salt.
Questions
Is it crunchy or hard?
Only the thin rice-paper shell is crisp. It's baked, not fried, so it crackles when you bite; the fruit inside stays soft and chewy.
Where is it made?
In Đồng Tháp, in Vietnam's Mekong Delta, by Tây Cát, a small family-run maker. Each round is cut, wrapped on its own, and packed by hand. No dyes; a little ascorbic acid keeps the color.
Is there added sugar?
A little palm sugar. Each 30 g serving (about 5 bites) has 3 g of added sugar; the rest of the sweetness is the mango itself. The chili salt adds 180 mg of sodium per serving. Full numbers are in Nutrition facts.
Does it need to go in the fridge?
No. Keep it in a cool, dry place; it keeps for 15 months unopened. Each bite is wrapped on its own, so the rest stay fresh after you open the bag.
One bag or three?
Same bites, three sizes. One bag is about 18 bites for $14.99 plus $4.99 shipping. Three bags are $29.98, so the third bag is free, and shipping is free too. Five bags are $44.97: buy 3, get 2 free, free shipping.
