The tropical fruit you can't buy fresh in the US. Soursop — graviola, na Xiêm — is creamy and tart, and it almost never survives the trip to an American shelf. We slow-dry it, roll it in a crisp rice-paper wrapper, and slice it into bite-size spirals. It snaps first, then goes chewy.
Snap, then melt
Ordinary fruit leather is one note — chewy, and that's it. Here the rice-paper wrapper is rolled through the fruit, so every slice gives you a crisp edge and a soft, creamy-tart centre in the same bite.

Hard to find, for a reason
Fresh soursop bruises within days of picking, which is why you rarely see it outside the tropics. Drying it is how the Mekong Delta has always kept it — and it concentrates the flavour rather than flattening it.
