Banana dried slowly turns dark and caramel-deep, nothing like a fresh one. Whole roasted peanut halves are rolled right through the sheet, so you get salt and crunch against the sweetness, with ginger cutting underneath. If the mango is the easy one, this is the one people finish the bag of.

Bananas are picked ripe and sliced by hand, peanuts roasted and shelled on site, then everything is slow-dried on bamboo trays — the same way it has been done in Đồng Tháp for generations. No factory line, no shortcuts.
